Wagyu
Wagyu is a first-class Japanese beef with supreme flavor, tenderness and juiciness with excellent marbling. It melts in your mouth for a sensational burst of flavor from the very first bite. It is an ultimate delicacy enjoyed only by the fortunate.

Kobe Beef
Kobe Beef is considered better than prime which is the highest grade given by the U.S.D.A. However, Chiyo Restaurant only uses premium Kobe Beef called "Washugyu" from a ranch located in the state of Washington. Our chef has tasted most of the “so-called” Kobe distributed in the U.S., and is satisfied only with the meat from this ranch. It streaks so thickly with fat, that the fat melts into the meat infusing it with flavor.

Prime Beef
Chiyo Restaurant uses Prime Rib that is the most tender and highest in fat among other U.S.D.A meats. It is the highest grade with roughly only 2% of American beef being categorized as prime.

A True Japanese Delicacy: “WAGYU”

At Chiyo Restaurant, you can enjoy three different kinds of beef. One of them is “Wagyu” a top-class Japanese beef with supreme quality. Chiyo is the only restaurant in Chicago that serves Wagyu.

Wagyu is strictly graded and sorted into five classes by professionals from the Japan Meat Grading Association. The Wagyu that is offered is certified in the top and second-highest classes. Therefore, this beef is certifiably among the very best Japanese Wagyu. Wagyu itself is among the highest quality beef available anywhere in the world!

The secret of “WAGYU"

One of the most important factors for grading beef quality is "marbling". This refers to the fine white streaks of fat that run through lean beef and enhance its flavor and tenderness. Wagyu’s excellent marbling puts it among the world's top class of beef.

The fat in Wagyu melts at just 77F (25C), a lower temperature than any other beef. This explains why Wagyu melts in your mouth for a sensational burst of flavor from the very first bite.
